Spaghetti with Beef and Zoodles

I love spaghetti but I can’t handle the gluten in the pasta. I have tried the gluten-free ones, but they really raise my blood sugar. I have heard about the “zoodles” or noodles make out of zucchini.

Here is a little video of me making my zucchini noodles with the WonderEsque Spiralizer.

Now the simple recipe

I made my sauce the usual way.  ⇒A jar of organic sauce from the store.⇐ ☺️ added some cooked grass-fed ground beef and let  it simmer on the stove while I made my zoodles.

I didn’t cook my zoodles because I knew the hot sauce would. I wanted them to stay firm like an aldente noodle. Plus raw is better for you.

The zucchini noodles did release some moisture when the sauce cooked them a little, but that was okay.

So it was a simple as that. No cook and gluten-free noodles for your spaghetti sauce.

Tomato Salad With Onion and Basil

This afternoon  was really nice outside, so I hunted for my bathing suit, and thought maybe I will sit outside and get some Vitamin D.  I carried my lawn-chair out to a sunny place and sat down, leaned back, shut my eyes and just enjoyed the peace and solitude.  There was a nice breeze blowing and the birds were singing in the background, what a great moment to just relax and enjoy my thoughts.  After awhile I walked around and looked at my garden.  I picked some green onions and basil and went inside and made a tomato salad.  I snipped the green onions and basil up with my kitchen shears and put them in a bowl.  Then chopped up a tomato and added it to the bowl with some salt and pepper and a little powdered garlic. I added a little Mayo and gently mixed it up.  Then I went back outside and found a nice shady spot to sit and enjoy this fresh tomato salad I just made.

Happy Cinco De Mayo

In the spirit of Cinco De Mayo I made Tacos.  Gluten free tacos with romaine heart leaves for my taco shell.   I started by sautéing some onions, and then the ground beef with my own seasoning mix for my ground beef by using some cayenne pepper, cumin, paprika, chili powder, garlic powder, salt and pepper.  I had some frozen corn in the freezer, so I added a little to beef mix.  I also added some tomato sauce and let that simmer for a few minutes.  Put the beef mixture in a lettuce leaf and topped with diced tomato and  raw onion.  Simple, gluten-free, dairy free and delicious.  Without adding corn this would be Paleo too.
